No-Bake Chilled Blueberry Cheese Cake


It's been a while since my last entry to this blog. And since it's the 30th of December today, this would probably be my last entry for 2009. I can't believe the year is almost over, I'm just not ready yet to let go of 2009!

Oh, before I forgot.. My friend and I made blueberry cheese cake as our Christmas cake. I didn't do much actually, all I did was stood there and let my friend do all the hard work, hahaha. So, all the credit goes to her.

Thick Chilled Blueberry Cheese Cake

Yummy~ it tastes heavenly.

Recipe of this lazy DIY-chilled cheese cake

CRUST [BISCUIT BASE]
Marie biscuits
Around 50g-80g butter, melted
Optional - Can add sugar but we didn't

CHEESECAKE FILLING
2 x 250g Philadelphia cream cheese (around 375g is ok but lazy to keep the remaining)
3 tbsp gelatine, dissolved in ¼ cup water
1 kotak whipping cream (supposed 1 cup but lazy to measure)
2 tbsp lemon juice (don't put over cus it'll taste sour/lemon-ey)
¾ cup sugar (adjust to your preferred sweetness level)
2 cup blueberries (adjust to any amount you like =) )

Finish the remaining blueberries* (unless you wanna keep it then put 2 1/2 cups blueberries)
1 tbsp cornstarch
1 1/2 teaspoons lemon juice
1/8 cup water
1/4 cup sugar (start by adding half of the sugar, add remaining to taste)
*used S&W Blueberries in Heavy Syrup (from Giant) RM26.90
**if not sweet enough after spreading the topping, sprinkle icing sugar on top =)

METHOD
  1. Lightly grease pan with melted butter.
  2. Crust - Mix the crushed biscuit and melted butter in a mixing bowl. Press firmly the mixture into the base of the pan. Refrigerate for 20 minutes.
  3. Filling: Dissolve gelatine in warm water. Mix cream cheese, lemon juice and sugar until smooth. Add in the blueberries filling. Put in the gelatine and mix well. Fold in the whipped cream.
  4. Pour filling into crust; Chilled for at least 4-6 hours or until firm.
  5. Spread topping.

So, that was the cake and from the looks of it, I guess I'll be adding some kilos 'cause I just can't get enough of it! I can't help it..how can I resist it.. cheese is my weakness.. Just like a vampire couldn't resist blood~ *sigh*

Speaking of vampires, I got the chance to finally watch Twilight Saga: New Moon last week. I was determined not to fall asleep like I did on the first movie - Twilight. But...of all movies I watched this month, this is the only one I fell asleep.. I guess I can't stand to see Edward and Bella's scene together.. It's like so sloooow..

Anyways, I've never been a fan of Twilight,
it's not really my cup of tea. The only vampire story that I ever and still like is a book by Christopher Pike - The Last Vampire. That is the only vampire story that I can be drifted in to. There are six books altogether in The Last Vampire, and if I'm not mistaken, I read them all 3 times. I just LOVE the story. And the author too of course. I read most of his books, and I love them all.

Oh, forgot to mention, before watching Twilight, I watched AVATAR!! in 3D!! The storyline is okay. It's a predictable movie, but I guess what makes it interesting is the graphic and the effects, and the out of this world imagination.. I like Neytiri in the movie, she's the one of the blue people, the one that saved Jake from the ... some kind of wolf animal thingy.. spunky li'l girl ain't she.. It's a good movie, worth my RM15 for two and a half hour.

And before ending the year, I get to watch Sherlock Holmes. It was not as I expected it to be. But over all, it was still a great movie. I like the settings of the movie - 1891 in London. I don't know why I like that sort fo settings, but I guess, it's sorta like going back to the past, and it's like you can see how the past was.. er.. it sounds stupid, but I guess that's why I like it.
